I'm wondering if you can use this with a touchscreen that is attached to the raspberry pi and have touch capability with it ?

Yes of course you can use a touchscreen :)
However, most themes currently don't support any interaction. You can have a look at the Fallout theme, which has a ‘Control’ tab that allows to play/pause music and control the volume.
Making (more) such interactions possible in the themes is also a feature we want to tackle in the future. But that will still take quite a while though.. :/
