Is there a way to update to the latest version without flashing a new sd card?

No, unfortunately that's currently not possible. If you want to upgrade to a newer version of the Raspberry Pi image you currently have to flash the image again Upgradeability is a planned feature and already on our list, but not really a priority right now
However, just to clarify: If you're upgrading the desktop application, you don't need to also upgrade the Pi image. All new features added in the desktop application will also work with the older versions of the Pi image.
