I have my display setup in a portrait orientation and whilst the content of the app is being displayed in the correct portrait orientation (following some modifications to the config file on the sd card of the pi), the dubbadhar theme is still being displayed in landscape on the portrait screen. I know this is to be expected, but I was wondering if there was a way to modify the dubbadhar theme so that it better fits the portrait orientation of a 800x480 display?

the dubbadhar theme is portrait only yes. It is responsive and scales to the size of the screen but does not break, due to the complexity of the graphs etc.
You can of course modify the theme if you have some basic knowlegde in HTML, CSS and Javascript. Another user already edited the dubbadhar theme. I gave him the basic steps on how to here: https://www.mod-bros.com/en/forum/t/modify-dubbadhar-theme~991.
